Bakery driven by youth; Essential part of India’s hospitality business

Bakery as a tasty culinary subject is trending fast amongst people in India. And youths in particular are fast catching up with the trend and really liking the products like brownies, bagels, cheese cream, cookies etc. Hospitality industry seeing the trends is also making efforts to satisfy the taste buds of the foodies and therefore many in-house Bakeries have come up in restaurants and five star hotels to serve to the demands of visitors.

Such is a tradition adopted by JW Marriott group hotels, where every JW Marriott hotel across India has a Baking Company which starts with its city name, like a JW Marriott in Pune has Pune Baking Company and JW Marriott Chandigarh has Chandigarh Baking Co.

“In Chandigarh, this idea was well meticulously thought out and during the inception of the project a market research was done and it was found that the city has a dearth of good bakery and pastry shops,” said Pallav Singhal, executive chef, JW Marriott Chandigarh, in an interaction with Food and Beverage News.

He said, “Bakery is now being termed as aspirational stepping stone towards high-end F&B facilities mainly caters to quick business meeting where people can have a quick bite while deliberations and even to close friends who wants to enjoy a moment together. Besides, now gifting branded bakery products is replacing the earlier mithai ka dibba trend as well.”

“And people are really appreciating it. Last year, half the total sales of CBC were takeaways,” he added.

He explained, “The Chandigarh Baking Company (or CBC as it is popularly known), is the bakery-cum-deli at JW Marriott in Chandigarh. The deli will definitely remind you of a nice upscale deli in any international hotel. This is the place to come if you want your fix of brownies, bagels and cheese cream, cookies, sandwiches, coffee served up in different ways or salad. One can also pick up a loaf of bread (various kinds), but they get sold pretty fast.”

And the concept is based on international trend where the cookies or bakery products are served hot and on demand.

Singhal added, “In line with the international concept of a baking company CBC is equipped with 2 ovens and there’s a baking schedule on a blackboard, so the customers know when to drop in if they want croissants straight out of the oven. And the Signature products at CBC are Orange Cointreau pastry, Cream Brulee, Strawberry white chocolate cake and Tiramisu. Chandigarh Baking Company is a warm and welcoming Deli and Patisserie that is all about cakes, cookies and coffees. It is one of the best pastry shops in Chandigarh. It is warm, friendly and anybody who walks in will feel a sense of comfort.”

He elaborated that the specialty of CBC is all the home made products, cakes and pastries. CBC is a youth hub. Luscious cakes, hand-crafted chocolates, grain-studded breads, quiche, candy jars; ice-cream and fine coffees beckon the customer here.

The executive chef added, “We have some of the most modern varieties of pastries across the world like Brulee & dark chocolate pastry, our main motive at CBC is to offer unique and innovative desserts to the cityite and expose them with what is happening in this field world over. We also take pride in making the highest number of wedding cakes in the city, not only this we are famous for making customised wedding cakes for our customers.”

On the total product range, Singhal added that initially they’re selling high end imported gourmet products at CBC but soon they realised that the city is very sensitive to price so we moved to the home made products and in-house produce. Moreover, to procure imported goods always remains a hassle due to the changing import laws and high cost involved in importing any product.

“We try and produce quality things in-house so that people of Chandigarh can enjoy quality with modern choices of pastries. You will also find jars of sundried tomato pesto on CBC shelves which is a signature from our Italian restaurant. The sous chef from Saffron, our Indian restaurant is bringing in spice blend which shall be available on CBC shelves soon,” he added.

CBC is totally casual dine facility doesn’t really need sophisticated attire or even not really that much money which a fine dine facility may demand,” he concluded.
