Bakers' day out at Bakery Business 2010

India has a giant bakery industry which is currently valued at Rs 69 billion. No one can take away the credit from India for the fact that it ranks third in global bakery industry and second in biscuits, but much of work is yet to be completed before it proclaims itself as leader in the segment.

Majority of this sector is unorganised, disconnected with the mainstream business, and thus lacking deeply in the expertise and knowledge needed to produce world class products in spite of all the available raw material on hand.

To give this sector a direction, an idea was conceived in the year 2006 by 17 visionary bakery traders to unite the industry under a single roof and provide a platform for knowledge sharing, networking and business.

"Bakery Business," is India's premier and only trade fair for bakery & pastry professionals. The fair will take place on December 8-10, 2010, at World Trade Centre located at Cuffe Parade in Mumbai.

From last year's 53 exhibitors, the show has taken a big leap forward with 90 exhibitors already being registered for this year's fair. Direct participation from Germany, Taiwan, Australia, USA and Spain will add flavour to the show.

Entering in its fifth edition this year, Bakery Business is the only show that brings latest information in technology and ingredients, available from across the country and the globe. "The show has a singular distinction of attracting top decision makers from across industry sectors, " said Pradeep Gopalan, director of Hospitality First, the event organisers for the show.

Hospitality First, as an organisation, brings over 30 years of industry expertise and specialisation in events and publishing in the hospitality, food service and tourism industry.

Team Hospitality First has gone strength to strength in creating a show par excellence. The most refreshing part of the show is its indigenous nature that brings in hope to the bakery industry now operating in bits and pieces to make a headway into the market through some concerted efforts.

Said Gopalan, "Given the diversity of a market like India, it will take some time to grasp market reality. We are happy that we have played a key role in developing this business platform."

The show was attended by around 3858 domestic and international visitors last year and the number is anticipated to increase this year, claimed the organisers.

Exhibiting at Bakery Business 2010 could prove to be fruitful to those who are looking for understanding the latest baking technology, marketing opportunities to obtain new contacts, meeting current customers at a showcase event, seeking new avenues and learning baking techniques through forums like live work shops, seminars and conferences.

Keeping the various issues surrounding the industry in mind the organisers have designed the show in such a way that it gives the traders in the industry, who will be present at the event, a chance to partake in different seminars, conferences and knowledge dissemination programmes.

Particularly seminars and live workshops will be crucial to the exhibition. The organisers thus have arranged for three separate events alongside Bakery Business 2010, which are: 3-Day Live Bakery Theatre, 1-Day Bakery "Business Knowledge" seminar and the 2nd edition of India Bakery & Pastry Challenge (IBPC). While IBPC is a sequel to last year, the other two are first time initiatives.

All these are being staged with a clear vision of making a baker or pastry professional's visit complete and fulfilling in all aspects. In the current avatar "Bakery Business 2010" is most comprehensive.

3-Day Live Bakery Theatre - December 8-10, 2010: Learning through observing is more effective than learning through books. Modelling helps one understand the intricacies in cooking, the task which classroom lectures fail to do. Thus live bakery theatre will be an apt medium for learning and upgrading baking skills by watching leading bakery and pastry chefs in action.

Chef Kunal Arolkar, pastry chef at Zanzibar, with his varied experience in the pastry industry ranging from India to Switzerland will prepare scrumptious American styled choco-chip cookies with a soft and rich choco-nut brownie, Italian Tiramisu, especially for the diabetic sweet-tooth, tart variations like the apple crumble tart & peach almond tart and also the soft-centred chocolate pudding served with some old-fashioned vanilla sauce, for the audience.

Chef Savio Fernandes, pastry chef, JW Marriott, Mumbai, who represented India at Asia Pastry Cup, 2010, Singapore, will share his expertise while playing with flavours in preparing European pastry with Indian mithai.

Showing his prowess with some lip smacking bread specialities like the European corn potato bread / rolls, flat herbed bread, pumpkin seed bread and stollenkonfect-stolen bread ( traditionally made on Christmas), chef Martin Fernnades will make sure that the audience pockets some good recipes to take home.

Bakery "Business Knowledge" Seminar - December 9, 2010

Bakery Business Knowledge Seminar is being held alongside Bakery Business 2010. Scheduled to be on December 9, 2010, the seminar will focus on new age innovations and developments in areas of bakery technology, bakery and patisserie ingredients, increasing shelf life of bakery products, customer education, brand building, and energy conservation and operational efficiencies in bakeries. An eminent panel of speakers have been lined up for the seminar.

Jaydeo Chokhawala, MD, Apple Bakery Machinery Pvt. Ltd, will be speaking on New Trends in Bakery Industry including stress free bread dough processing system, production of center-filled buns and rolls, oil-less dough dividing system for bread production and new range of equipment for automation.

Prashant Nair, national sales manager, Monginis Foods Pvt Ltd, will share ideas on "Building a successful bakery brand," which will include tips on building franchise module, highlighting pros and cons and also a brief on situational analysis.

Dhiren Kanwar, country head, Puratos India Ltd, will give a presentation on "Future of Bakery and Patisserie ingredients market." His topic would cover responsibilities of ingredient manager, customer demands and new technologies for developing market.

P Krishnakumar, senior central manager, food division, HUL, will present on affordable techniques to improve the shelf life of bakery products.

Kunal Arolkar, pastry chef at Zanzibar, will brief the audience on "client education in the F& B sector." Arolkar offers kitchen solutions, conducts demos and workshops and is a pioneer of F&B client education in India.

2nd edition of India Bakery & Pastry Challenge (IBPC) - December 9, 2010

"India Bakery & Pastry Challenge 2010 (IBPC) is a professional bakery and pastry excellence display competition organised at a national level involving senior and apprentice chefs from the finest of hotels and bakery/pastry chains. Almost all leading 5 & 4 star hotels of the region will be participating in IBPC.
