The army personnel deployed in icy heights like Siachen and Kargil, can now look forward to grab on mutton and chicken biryanis or non-vegetarian sandwiches with all nutrients and taste attached. Following a demand from the army personnel for non-vegetarian food, the Defence Food Laboratory in Bangalore developed a biryani with a longer shelf life..

In its bid to cater to growing demand for non- vegetarian food among defence personnel deployed in high- altitude places, Mysore-based Defence Food Research Laboratory (DFRL) has developed specially prepared and packaged these delights that have a shelf life of one year.

These products had been developed based on non-thermal technology, which helps retain nutrients and taste of Indian food for a long time. DFRL Director Amarinder Singh Bawa said, “We have developed these products after the Indian Army evinced interest in non-vegetarian fare.”

The biryani would contain pieces of non-veg food which would stay fresh for long time and give the taste of home made biryani to the soldiers recruited in high altitude areas where temperatures can be very low.

Prof Bawa said the DFRL, an organisation coming under Defence Research and Development Organisation (DRDO), had also developed appetiser foods and beverages, especially for the Armed Forces, as Armymen tend to lose appetite during deployment in high altitude areas like Siachen and Kargil in the Himalayas due to low oxygen level.

The appetiser foods and drinks can be consumed 30 minutes or one hour before a meal to improve appetite. Theses are based on some of the spices and fruits like lemon, ginger, ash gourd, cummin or even curd-based. It has been tested by the Army and accepted. The large-scale production of the same would start soon.

Dr Bawa also disclosed that the DFRL was developing beverages for the use of personnel working in high altitudes and humid areas based on ash gourd, 'pudina', cucumber and betel leaves.

DFRL had also developed a biodegradable package material for the packaged food as its products were often used in high altitude areas like Himalayas and the packing material is likely to cause environmental pollution.

The DFRL chief said the lab was open to provide the technologies it had developed to the private industry.
