Kazuya head chef at Leela Palace New Delhi’s Japanese restaurant Megu

The Leela Palace New Delhi has appointed Shimomura Kazuya as the new head chef of Megu, its modern Japanese restaurant.
Backed with 26 years of experience, he is set to bring intense excitement, exquisite technique and perfectly balanced flavours to discerning diners at Megu.
Commenting on the appointment, Louis Sailer, general manager, The Leela Palace New Delhi, said, “We are pleased to welcome Kazuya to our modern palace. In his new role, he will head the Megu team and elevate the modern Japanese dining experience further. I am sure, with his signature style and natural flair, he will not only charter new culinary heights but also excel in the fine dining segment in the city.”
A dynamic chef, Kazuya has garnered acclaim for his seamless integration of modern and traditional Japanese cuisine and has effectively created an inimitable repertoire by working in globally-recognised kitchens of Hinokizaka at Ritz Carlton Tokyo and in Mizumi, the Michelin-starred restaurant at Wynn Macau.
In his initial years, he mastered the art of Tempura and acquired the skill of curating Kaiseki, a traditional multi-course Japanese style dinner.
Kazuya loves to experiment with sensory perceptions of sound, sight and smell, while whipping some exotic delectable platters. He is most comfortable at the live kitchen counter, where guests can watch his cooking techniques.
