Nando's, a South African casual-dining-cum-quick service restaurant (QSR) chain, opened its first outlet in Ludhiana, Punjab, recently.

The brainchild of two South African entrepreneurs, Robert Brozin and Fernando Duarte, Nando's – a chain with a Portuguese/Mozambican theme – was incepted in 1987, and has since spread across five continents. It has over 980 outlets today.

Nando's entered India in 2010 with its first restaurant in Chandigarh followed by another one in Bangalore. "This is the third restaurant in India and second in this region," said Vikrant Chowgule, managing director, Indage Group, the master franchisees for India.

"One more restaurant is scheduled to be opened in Bangalore; and in the current year, Nando's would have its presence in Chennai and New Delhi too," he informed.

Manmohan Singh Chadha, partner, Nando's India, said that looking at the tremendous response and demand from Punjabis, Nando's shall be in Jalandhar in the current financial year.

Nando's is known for its quality and healthy food. The core offering at the chain is the delicious flame-grilled peri-peri chicken; besides a selection of salads; appetisers; burgers and wraps; with equally rich options for the vegetarians.

Brad Byrne, training and development manager, Nando's said, "Punjabis are known the world over for their love for good food; and we are very excited to bring this unique flavour to the heart of Punjab in Ludhiana.

"Known for its deliciously spicy and fiery dishes, the peri-peri remains a closely guarded secret and is a priceless work of culinary art! It's the spicy ingredient which creates the base for the Nando's Peri-peri chicken, which is carefully prepared and flame grilled to perfection,” Byrne added.

“Peri-peri is the core differentiator and is the unique selling proposition (USP) of Nando's, and is the heart and soul of the brand,” says Chumky, a master chef from South Africa, who is in Ludhiana to oversee the perfect delivery of international cuisines. Peri-peri recipes have always been a source of family pride, and have been passed down from generation to generation, he said.

The Nando's peri-peri sauces are a combination of old-world mystery and fiercely- guarded secrets. Nando's recipes reveal themselves in the peri-peri sauce range, Nando's cooking sauces and marinades, and of course, the world-famous chicken. One can chose the intensity and flavour of chicken dressing from four varieties: Extra Peri-Peri Hot; Hot Peri-Peri; Mild Peri-Peri, and Lemon & Herb.
