Indian bakery industry and prevailing trends
With respect to growth of Indian bakery industry, Gopalan stated, “For want of validation, and given the unorganised state of the market, I am refraining from quoting figures, as there are different figures available in the market. Having said that, the industry is growing at a respectable pace of 15-20 per cent.”

And highlighting the trends witnessed in the current time, he added, “The prevailing trend is the growing competitive nature of business, something seen similar to the foodservice sector a few years ago.”

“There is a growing consciousness in the industry to up standards on hygiene, display, presentation, variety of products, packaging and branding. Bakery operators in metros are upping the ante in brand standards inspiring players in the Tier-II and III markets to match them,” he added.

Gopalan said, “Aspirational levels in the industry are extremely high, given the shifty consumer nature, majority being youth considered to be change drivers of the future.”

“Automation and investment in production lines are here to stay specifically with medium to large industrial operators given the ease of production, less reliance on unskilled manpower and product delivery of sustained consistency,” he added.

“From a cost-driven approach, bakers are seeking true value for their investment in capital goods, this is a healthy change and indication of market maturity,” Gopalan said.

“Growing interest among private investors, bankers and venture capital players in the industry is making bakers conscious of the lure for the industry and possibility of financial aid for scalability if one owns a good brand,” he added.

“Knowing your customer is emerging important given the competitive nature of the market. In metros and high traffic area, in less than a kilometer radius, one can see 20 -25 bakery operators; unseen before,” Gopalan said.

“Per capita consumption being abysmally low, the market remains ready for a bigger deluge of products and players. How one harnesses the potential is the moot question,” he opined.

The lure of the industry is attracting professional and practicing bakery and chefs from leading hotels turn successful entrepreneurs. This is necessitating the much-wanted change in the industry for high standards in creativity, quality and professionalism.

Challenges
While mentioning the challenges, Gopalan said, “The challenges remain aplenty, and have stood steadfast. These include the lack of skilled labour, the industry still not having emerged as an employer of choice, the lack of adequate professional bakery institutions to meet the growing need for skilled human capital, and the industry not approaching this issue cohesively, but piece meal.”

“Bakery Business, as an industry and business catalyst, aids the industry in choosing appropriate technology and ingredient innovations in the efficient running of bakery operations,” he added.

“It offers myriad opportunities to learn engage and take serious purchase decisions with OEMs (original equipment manufacturers) and official representatives of leading international brands,” Gopalan said.

“The ancillary programmes support operators track future trends and consumer habits shaping the future of the industry,” he concluded.
