German combi-oven maker Rational launches book on Indian food at Aahar

German food technology innovator Rational Group launched a cookbook on Indian food at the Aahar International Fair 2013, currently underway at New Delhi's Pragati Maidan. It comprises about 35 recipes.
Rational manufactures combi-ovens for professional kitchens. These ovens can do multiple tasks at a time and can be used to prepare various dishes at the same time and with the desired texture.
It is suitable for preparing Indian dishes, including aloo tikki, roasted chicken, peas pulao, yellow dal, dal makhani, all kinds of Indian breads, parathas, and many more. Rational is currently working to complete the book and extend its reach.
This oven works differently compared to the regular ones. It cooks food at levels and divisions segregated by trays, and they can be arranged for temperature in accordance with a prescribed menu set for that recipe.
“Given the fact that Indian food is difficult to prepare in a western way, it has always thrown a challenge on the experts to bring out such a technology that would help in making Indian food similar to the western way,” said Pinaki Banerjee, country head, Rational.
“The Indian food has a variety of ways to cook. But here at Rational we’re trying to set standards for the Indian food making so that each time when you cook food, you would get the same product, with same taste and texture,” said Banerjee.
Banerjee said the focus is on developing skills and to make a team of expert that would help the company to make a delivery solution for the food industry. The company is also running a helpline service useful in case of breakdown of its machine.
The response time of four hours in metropolitan cities and 24 hours in tier-II cities. In fact, Rational is also focussing on tier-II cities, after having authorised 90 strategic dealers in the metros.
Banerjee told that the emerging metros have a lot to offer. “Particularly, in cities in Maharashtra, such as Nagpur, the demand for food solutions is very high. We already have our test kitchen at Mumbai and Pune where our Chefline service is available, and we are expanding our partnerships in the other cities as well,” he said.
