Zen at The Leela Palace Bengaluru introduces refreshed Pan Asian menu

As The Leela celebrates 25 years of shaping Indian luxury hospitality, Zen at The Leela Palace Bengaluru marks the occasion with a refreshed culinary chapter of its own. Building on its longstanding association with Pan Asian dining in the city, Zen introduces a new menu that brings together the distinct culinary traditions of Japan, Thailand and China, balancing time-honoured techniques and regional flavours with a contemporary approach to presentation and experience.

Rather than reinventing what Zen stands for, the new menu deepens its culinary identity. Each cuisine is treated on its own terms, allowing the precision of Japanese cooking, the layered flavours of Thai cuisine and the bold, wok-driven character of Chinese food to come through distinctly. From sushi and sashimi to Japanese grilling, Thai curries and Chinese wok preparations, the menu draws from techniques that have defined these cuisines for generations, while giving them a fresh expression for today’s diner.

Led by chef Constantine, with Thai culinary expertise from chef Piched Paoleng, the menu reflects a considered approach to pan Asian dining. The focus is on the integrity of ingredients, balance of flavours and craftsmanship behind every preparation, with contemporary touches that enhance rather than overshadow the character of the cuisine.

Among the new and refreshed offerings, the Zen Signature Sushi & Sashimi Platter brings together a selection of Japanese preparations in a signature presentation. The Chu Chi Kae Thai Lamb Chop pairs tender lamb with the aromatic depth of Thai red curry, while the Katsu Curry combines a crisp Japanese-style cutlet with fragrant curry and rice. The Yam Sen Mee Gai, a Thai glass noodle salad layered with chicken, fresh herbs and a vibrant dressing, brings freshness and brightness to the menu, while Shira Ae showcases the delicate, understated character of Japanese cuisine.

Nishant Agarwal, vice president and general manager, The Leela Palace Bengaluru, said, “As The Leela celebrates 25 years, we are looking at how we can continue to evolve experiences that have become an important part of our guests’ journeys. Zen has a distinct place in Bengaluru’s culinary landscape, and this menu is an evolution of that identity. We have stayed rooted in the traditions and flavours that define Japanese, Thai and Chinese cuisine, while bringing a fresh perspective to how they are experienced today. It is this balance of heritage, craftsmanship and contemporary hospitality that we hope will make the new menu meaningful to both our longstanding guests and a new generation of diners.”  

Chef Simran Singh Thapar, executive chef, The Leela Palace Bengaluru, said, “Zen has always had a distinct place in Bengaluru’s dining landscape, and with this menu, our focus was to strengthen what makes the restaurant unique. We looked at Zen as a complete dining experience and how each dish, flavour and element of the menu contributes to that identity. The idea was to retain the familiarity that our guests associate with Zen while introducing new layers that make the experience feel fresh and relevant. This menu is a reflection of how Zen continues to evolve while staying true to its roots.” 

“The idea was not to change the character of Zen, but to bring greater depth and clarity to it. Japanese, Thai and Chinese cuisines each have their own techniques, ingredients and flavour profiles, and we wanted that individuality to remain at the centre of the menu. The contemporary elements come through in the way we bring these dishes together and present them, while the foundation remains firmly rooted in the cuisine,” said chef Constantine.
