Symrise brings AI to the table

Symrise has significantly upgraded its Symvision AI platform, adding powerful AI-assisted formula-prediction capabilities to its existing trend-forecasting engine. The enhancement marks a major leap: not just forecasting flavor trends, but designing them.

Symvision AI was originally launched to help food and beverage companies anticipate future flavor trends by analyzing multisource data — including social media, historical launches, and flavor-market insights. Now, with these new tools, flavorists can go one step further: predict how changes in a formula will affect taste, and then fine-tune it for optimal flavor performance.

The revamped system features an interactive “dashboard cockpit” that displays predicted sensory outcomes and suggests adjustments in real time. For example, when working on a reduced-sugar recipe, the AI model can forecast how sweetness perception shifts and recommend the right “sweetness balancing” ingredients from Symrise’s symlife portfolio.

Symrise says this upgrade will accelerate innovation, reducing trial-and-error in product development and helping brands launch reformulated or entirely novel products faster. By combining machine learning with deep flavorist expertise, the company aims to shorten development cycles while maintaining sensory quality.

Leif Jago, Global Marketing Manager (Food & Beverage) at Symrise, points out that rapid shifts in consumer preferences, rising ingredient costs, and supply chain disruptions make such agile formula-design capabilities more critical than ever.

Gerhard Krammer, SVP of Research & Technology, adds that integrating human flavorist creativity with predictive AI opens “exciting new frontiers” in taste innovation, helping companies navigate today’s fast-changing food landscape with greater confidence.
