Novotel Mumbai, a Juhu beach-property by Accor, hosted an exclusive vegan masterclass with Chef Sebastien Kardinal, a prominent activist and culinary expert leading the international surge towards veganism.

Celebrating the hotel’s 20 properties in India, Kardinal’s visit was part of the experiences and campaigns planned for the brand. During his India tour, he will be hosting various experiences at the hotel’s properties in Mumbai, Ahmedabad, Hyderabad, Kolkata and New Delhi to showcase unique gastronomical skills.

His specialisation lies in revising French and international gastronomic specialties and crafting their vegan versions. Guests discovered the secrets to great vegan cooking as they relished an array of delectable dishes such as Basquaise and Shepherd's pie, Blanquette Old and Stuffed Tomatoes and more.

With his expertise, our in-house chefs as well as our guests learned how vegan cuisine has revolutionised the culinary space. Plus Que Parfait along with Business France helped us organise the chef’s visit to showcase French vegan cuisine in the country.

"It was great to have Chef Sébastien Kardinal at Novotel properties in India and our guests as well as our chefs learnt many new things from him. We at Accor are completely responsible for giving our guests sustainable produce and believe that we should give back more to the planet than what we take. Having chef Sébastien all the way from France is one such great initiative,” said Ganapathy Mallya, director of culinary transformation, Novotel Hotels India.

Rifaquat Ali Khan Mirza, co-founder, Plus Que Parfait, shared,"We at Plus Que Parfait (‘more than perfect’ in French) establish a link between the French culinary & hospitality ecosystem and the Indian hospitality industry backed by strong well-established associations and understanding of both countries. These activities range from curated culinary experiences and workshops to training and brand enhancements. We are pleased to curate Chef Sebastian Kardinal's vegan masterclass tour in association with Accor across Novotel hotels in India, where we share a common culinary belief system."

The engaging masterclass was followed by a sumptuous lunch buffet, which included crafted vegan specialties by Kardinal for one to savour.
