Sarson da saag and makkai di roti universal favourite dish from Punjab

When you think of Punjab, you would visualise wheat fields, mustard blossoms, rice paddies and sugarcane. Further imagination would take you to a colourful blend of vegetarian and non-vegetarian dishes served along with Indian breads and rice. Known as India’s bread basket, the Punjab is famous for tandoor, a clay oven used to cook bread and meats. The Punjab is a haven for the world’s most delectable curries and that can leave an everlasting taste on one’s tongue!

Punjabi food with its rich aroma and royal taste, has been a favourite amongst Indian cuisines, world over. A speciality of the traditional dhabas, Punjabi cuisine is the most widely relished variety of food all over the country. It is one of the most distinct and popular Indian cuisines and coming from the northern region. It offers a vast variety of dishes that are prepared with varied traditional culinary styles, particularly the tandoori style.

The exotic and appetising tandoor items and various other mouth-watering and finger-licking dishes have a rich, spicy and buttery flavour savoured with Punjabi Basmati rice of varied forms and special Punjabi breads like tandoori roti and naan. Ghee is another ingredient that makes it to almost all Punjabi recipes. Signature Punjabi dishes like chhole bhature, rajma chawal, dal makhani, sarson da saag and makki di roti, aloo paratha, butter chicken, lassi, gulab jamun and tandoori dishes.

Sarson da saag te makki di roti is a quintessential Punjabi dish that is enjoyed by both Punjabis and non-Punjabis alike. The dish uses spinach-which makes it a healthier alternative. Sarson ka saag is a mixture of leafy vegetables which is flavored with various spices by the process of tadka. To accompany this delicious vegetable dish is the famous Indian bread, called a roti, made from corn.

One of the signature dishes that you can gorge on at a Punjabi dhaba is the dal makhani. It is a simple dal dish made from rustic spices and techniques. In many restaurants, the dal is delicately simmered overnight to enhance its creaminess and bring out the flavours.

Butter chicken is a very popular Punjabi non-vegetarian dish that is well liked by most of us. It is made with succulent pieces of chicken cooked in silky tomato gravy. This dish is just lip-smacking, luscious and impossible to resist. Butter chicken goes well with butter naan.

Stuffed parathas are sumptuous and tasty especially with makhaan (butter). It can be served as the main course of a multi-course meal, or it can be served as a one dish meal because it is quite wholesome and satiating when stuffed with veggies, lentils and other ingredients. They can also be spiced up properly and simply served with curds and raita.

After eating all the delicious Punjabi offerings, one needs something to calm one’s stomach. Lassi, a traditional Punjabi drink is a delicious mixture of spices, water and yoghurt, that will help one digest one’s food. In Punjab, it is served in large glasses made of heavy metal or clay, topped with fresh cream.
