Roots have recently opened its door in the City of Joy, and ever since the cityscape has changed. The restaurant, which heralds foraged and upcoming food stories, has a new age twist on Asian, European and Indian style cooking. Local ingredients get a makeover as chef Chanchal Datta puts his expert spin by taking them international. A regional palate meets modern cooking techniques to truly create something special.
The café, lounge, bar and kitchen is based on the principle that one can achieve true bliss when one returns to their roots. The 12,000 square foot space which can seat 340 pax, aims to be one of the finest offerings of Kolkata. Overlooking the majestic Victoria Memorial, the place comes alive, be it day or night. With an impressive alfresco dining option, the bar-lounge-kitchen provides umpteen opportunities to dine in a new ambience every time. The iconic Chowringhee road is right below, buzzing with life and vigor.
Ramesh Agarwal, owner, Roots, said, “The world is trying to overdo everything. Just making things larger than life doesn’t do the job! The basics need to be just right. If a customer orders a drink, we need to ensure the ingredients are correct, the mixologist is following the order and the presentation is impeccable. When the customer orders any food, it has to be hot, fresh, delicious and true to taste. Whatever we do here, we want it to be right. The Roots have to spot on, the rest will follow.”
