Premium food trends to propel Indian gourmet market to US$24.5 bn by 2034

India's gourmet food market is poised for robust expansion, with its size expected to grow from US$5.4 billion in 2025 to US$24.5 billion by 2034, registering a CAGR of 17.78 per cent during 2026-2034, according to an IMARC Group report. The growth is being driven by the rise of boutique bakeries, premium desserts, specialised retail networks and e-commerce platforms, reflecting increasing consumer demand for high-quality, health-conscious and globally inspired food products.
Against this backdrop, premium food brand Savore is strengthening its focus on regional ingredients, traditional production methods and clean-label offerings to cater to evolving consumer preferences.
Namrita Malhotra, Founder and Managing Director of Savore, said India's regional food traditions remain an underutilised asset in the premium gourmet segment. She noted that centuries-old indigenous techniques such as fermentation, cold pressing and traditional preservation methods form the foundation of the company's products rather than serving as marketing tools. According to her, brands that successfully elevate India's culinary heritage through modern packaging, storytelling and quality assurance will shape the future of the country's gourmet food market.
Malhotra observed that Indian consumers are increasingly associating premium products with authenticity rather than imported goods. She said demand is shifting towards traceable, thoughtfully made products such as ghee, cold-pressed oils and natural honey that combine traditional methods with modern quality standards. Savore aims to position itself at this intersection of heritage and contemporary consumer expectations.
The company also sees the growing preference for clean-label and minimally processed foods as a long-term structural shift rather than a passing trend. Malhotra said Savore continues to manufacture its products in small batches using recognisable ingredients without unnecessary additives or preservatives, enabling it to maintain product purity and transparency.
On balancing traditional craftsmanship with modern quality and scalability, she said the company has retained age-old production methods such as cold pressing and slow-simmering while strengthening sourcing practices, hygiene standards and batch-wise quality testing. Savore has deliberately prioritised consistency and craftsmanship over rapid scale.
Innovation at Savore, according to Malhotra, is centred on refining everyday products rather than introducing novelty for its own sake. Beyond pantry staples, the company has expanded into personal care products such as hand creams and hand wash, and is developing additional offerings aligned with its philosophy of premium everyday wellness.
Sustainability remains another core focus area for the brand. Malhotra said Savore limits production volumes to minimise waste, works with sourcing partners that follow responsible agricultural and production practices, and continues to improve its packaging and manufacturing processes with environmental responsibility in mind.
She acknowledged that one of the biggest challenges in building a premium food brand in India is educating consumers about the value of small-batch production and the higher costs associated with purity and craftsmanship. Rather than pursuing rapid expansion, the company has focused on building long-term consumer trust through consistent quality.
Looking beyond India, Malhotra said international markets are showing increasing interest in authentic, story-driven Indian gourmet and wellness brands. She believes there is significant opportunity to present Indian premium food products with the same refinement associated with global luxury food brands. However, Savore plans to pursue international expansion gradually through a market-by-market strategy.
Sharing the company's long-term outlook, Malhotra said the definition of premium food will increasingly revolve around transparency, traceability and genuine craftsmanship over the next five years. Savore intends to expand thoughtfully into new categories while maintaining its emphasis on purity, authenticity and everyday luxury.
