This September, Permit & Co., heads East with The Eastern Express, a month-long menu inspired by the food, ingredients and landscapes of the Northeast and Eastern Himalayas. Available from September 1 to 30, 2026, the menu brings together flavours from Nagaland, Manipur, Tibet and beyond, reinterpreted through its distinctly Bombay point of view.
Inspired by a journey through winding mountain roads, misty valleys and regional kitchens, The Eastern Express puts ingredients such as bamboo shoot, axone, bhut jolokia, timur and black rice at the centre of the experience. The result is a menu that keeps the character of the region intact while allowing Permit & Co. to take a few playful liberties along the way.
The journey begins with appetisers such as Fumbi, steamed green gram cubes served with young turmeric, timur and tomato chutney, and Char-Grilled Wild Mushroom Choila, paired with roasted tomatoes, timur and mustard oil. Familiar favourites arrive in the form of Phaley, pan-fried Tibetan stuffed patties, and Momos, served with a sesame-peanut sauce.
Pork takes on several forms across the menu, from the comforting Pork Shapta, wok-tossed with peppers, ginger and soy, to Smoked Pork Tacos, where Naga smoked pork meets bamboo shoot, bhut jolokia and pickled beans in a soft taco.
For mains, Kala Chicken with Sticky Rice brings together black sesame, mustard oil and slow-tossed chicken, while Kewa Datshi pairs a warming cheese curry with potato and onion hash browns. Naga Dal Khichdi combines rice and dal with bamboo shoot and Naga chilli sauce, while the Thukpa, available in vegetarian, chicken and pork versions, delivers a slow-built Tibetan noodle soup made for lingering over.
The menu also features Smoked Pork Curry with Sticky Rice, layered with Naga pork, axone and bamboo, before ending on a distinctly Permit note with Black Rice Phirni Brûlée — chak-hao phirni finished with a torched sugar crust.
