Mirai, Mumbai, will host Michelin-starred chef Daisuke Mori for an exclusive two-day culinary pop-up on October 28 and 29, 2026. Scheduled from 8pm to 10pm, the event will feature a six-course tasting menu showcasing French-Japanese cuisine, combining Japanese ingredients with French culinary techniques.

The curated menu will begin with Giant Mud Crab served with crab rémoulade, cauliflower espuma and curry oil, followed by Baked Mushroom Tart with potato mousse, onion compote and tapenade. The subsequent courses will include Lobster Barley Risotto with bisque jus, Parmesan and seaweed; Local White Fish Tempura featuring red snapper, seaweed dashi and yuzu; and Roasted Chicken accompanied by French chestnuts, rosemary and caramelised figs. Matcha Panna Cotta with vanilla and silver leaf will conclude the meal. House of Suntory will complement the menu with a selection of cocktails and spirits served over ice.

Chef Mori previously headed the kitchen at Takumi by Daisuke Mori in Hong Kong, which held a Michelin star for seven consecutive years from 2017 to 2023. A graduate of Osaka’s Tsuji Culinary Institute, his professional experience includes Château Restaurant Joël Robuchon in Tokyo, Restaurant Taillevent in Paris and Restaurant Signature at Mandarin Oriental Tokyo. He currently serves as executive chef at Carlyle & Co., Rosewood Hong Kong.

His culinary philosophy combines the precision, seasonality and ingredient-focused approach of Japanese cuisine with the depth and techniques of French cooking, creating dishes centred on balanced flavours and considered presentation.

Saamir Chandnani and Rinchen Angchuk, co-founders, Mirai, said, “The initiative reflects the restaurant’s commitment to offering distinctive culinary perspectives and experiences beyond conventional dining. They added that hosting Chef Mori would introduce Mumbai diners to his interpretation of French-Japanese cuisine through a carefully composed tasting menu.”
