Millet-based namkeen now gaining popularity

The namkeen industry, a significant part of India's snack market, has seen substantial changes in recent years. Traditionally, namkeen refers to savoury fried snacks that are deeply rooted in Indian food culture. However, as consumers’ preferences evolve and the demand for healthier options increases, the industry is changing quickly. From healthier cooking methods to advancements in production technologies, the namkeen sector is progressing rapidly.

Healthier and Nutritious Options
Health-conscious consumers are driving demand for healthier snacks, and this shift is influencing the production of namkeen. Manufacturers are moving away from traditional deep frying, which is often associated with high fat content, and instead using healthier methods like baking, air frying, and roasting. These alternatives help reduce the fat content of the snacks while still maintaining their flavour and texture.

In addition to changes in cooking methods, manufacturers are also using healthier ingredients. For example, millets, pulses, and vegetables are being incorporated into namkeen instead of refined flour. These ingredients cater to the growing demand for nutritious snacks, particularly among millennials and Gen Z, who are more focused on their health. Millet-based namkeen, which would have seemed unusual a few years ago, is now gaining popularity. The government’s promotion of millet through initiatives such as the "Year of Millet" has also boosted this trend. Some companies are even adding seeds like chia seeds and flax seeds to increase the nutritional value of their products, helping to boost their fibre and protein content.

Gluten-Free and Vegan Variants
With increasing awareness around gluten intolerance and the rise of plant-based diets, many namkeen brands are now offering gluten-free and vegan options. Ingredients like rice flour, sorghum, and buckwheat are used to create gluten-free snacks that cater to those with dietary restrictions. 
While these products cater to a smaller, niche market, they are becoming more accessible. However, chickpeas remain the most widely used ingredient in namkeen production, as they offer a healthy and affordable option for most consumers.

Flavour Innovation 
The days of namkeen being limited to only salty or spicy flavours are long gone. Today, manufacturers are offering a wide range of innovative and customised flavours to suit the diverse tastes of consumers. For example, namkeen is now available in flavours like tangy lemon and chili, cheese and jalapeno, and even fusion options such as Mexican and Tandoori.

Interestingly, some flavours that were once rare in traditional Indian namkeen are becoming more mainstream. Mexican-inspired namkeen, for example, is becoming increasingly popular, similar to how Manchurian was created in Mumbai in the 1970s to cater to local tastes. This fusion trend continues to grow, offering consumers exciting new options.

Additionally, many brands now offer personalised seasoning options, allowing consumers to choose the level of spiciness or sweetness they prefer. This trend reflects the desire for more individualised food experiences, where people can adjust flavours to suit their unique tastes.

Regional Flavours
While global flavours are gaining traction, regional and traditional namkeen flavours continue to dominate the Indian snack market. Flavours from various states, such as Rajasthan, Gujarat, and Maharashtra, remain highly popular among consumers because they resonate with local tastes and preferences.

Moreover, brands are beginning to focus on authenticity by incorporating heritage recipes that have been passed down through generations. This helps consumers reconnect with traditional flavours while still enjoying modern versions of the snacks they know and love.

Focus on Clean Labelling
As consumers become more aware of the additives and preservatives in their food, the demand for clean-label products has increased. Many namkeen brands are now moving towards using more natural ingredients and providing transparent labelling on their products.
Instead of using artificial colours or preservatives, many companies are turning to natural spices, herbs, and traditional preparation methods. This shift towards clean labelling reflects the growing consumer desire for healthier, more transparent food choices.

The namkeen industry is undergoing a significant transformation, driven by a mix of health trends, sustainability efforts, and technological advancements. As consumer preferences shift towards healthier, more sustainable snacks, manufacturers are adapting to meet these demands. Innovations in cooking methods, packaging, and flavour development are opening up exciting possibilities for new products.

For food technologists, this evolving landscape presents numerous opportunities to develop innovative products that meet changing consumer needs. Whether through healthier cooking techniques, eco-friendly packaging, or personalised flavour, the future of the namkeen industry holds great promise and potential for growth.
