Michelin-star chef Gaborieau to host dinner on two-city tour of India

Stephane Gaborieau, who has the title of best chef of France under his belt, will host dinner at The Market, at The Ritz-Carlton, Bangalore (at 8pm on October 16, 2019) and the Sofitel Hotel in Mumbai during his upcoming tour of India with All Things Nice.

In the southern city, he will team up with the hotel’s executive chef Bruno Cerdan and the culinary team for the dinner, which will be priced at Rs 6,000 (all inclusive). The hotel is the hospitality partner for the event. Other partners include Truefitt and Hill and TWG Tea.

Gaborieau will curate a five-course menu for the evening. It is as follows:

The first course will comprise eild mushroom croquette, cream of artichoke with walnut oil and artichoke chips.

The second course will comprise Charlotte of candied vegetables, served warm, emulsion of basil leaves with pine nut.

The third course will be either sea bass in black olives crust, citrus fennel compote, star anise fish fumet or vegetable broth risotto, zucchini mousse with pesto.

The fourth course will be either chicken ballotine stuffed with tarragon langoustine cooked, truffle potato press, reduced jus or fresh pasta cannelloni, julienne of root vegetables with saffron, espelette pepper coulis.

The fifth course will comprise a Bavarian dome of exotic fruits or curry flavoured coulis.

The dinners will be paired with wines from Grover Zampa Vineyards and Aspri Spirits by Nikhil Agarwal, sommelier and chief executive officer, All Things Nice.

“This is the sixth international personality that we have brought this year itself, and we will endeavour to continue giving people in India unique dining experiences,” Agarwal added, expressed his excitement at bringing the chef, who has bagged a Michelin star for his Paris restaurant Le Pergolèse, to the two Indian cities.

“My team looks forward to hosting the exclusive sit-down dinner by Gaborieau, and we are positive it is going to be a one-of-a-kind experience in the city,” Rai said.
