Meliá Pattaya Hotel unveils Den’s premium izakaya concept
Saturday, 24 October, 2026, 15 : 00 PM [IST]
Pattaya, Thailand
Meliá Pattaya Hotel is introducing a new chapter in its culinary offering with the transformation of Den restaurant into a modern premium izakaya specialising in Japanese grilling and sharing plates. The new concept will be launched with an exclusive four-course dinner paired with premium sake selections on October 30, 2026.

Steeped in Japan’s traditional izakaya culture, it takes inspiration from the country’s informal pubs where people gather over drinks and small dishes designed for sharing, offering premium Japanese grilling and beverages amid an atmosphere that pays homage to Tokyo after dark.

Previously known for its Japanese-Peruvian Nikkei cuisine, it has also been reimagined as a lively social destination, with a new musical direction blending Japanese city pop and contemporary sounds. Japanese highballs, freshly poured beer and sake are central to the experience.

Beginning with sharing appetisers of edamame and sweet potato fries, followed by fried Wagyu gyoza and aburi shime saba pan con gohan. The second course features an ocean-inspired selection of hand-sliced salmon crudo, salmon and tuna croquetas, and assorted sushi rolls.

A highlight of the evening is the premium yakitori selection, featuring chicken thigh, Kurobuta pork, Wagyu striploin, Saikyo miso grouper and grilled vegetables, followed by yuzu sake sherbet for dessert. Each course will be paired with premium Japanese sake in collaboration with beverage distributor Italasia.

Beyond the launch event, its new à la carte menu focuses on Japanese-style grilled skewers prepared over a charcoal Robata grill. Sharing dishes include spicy chicken karaage and fried Wagyu gyoza, while subtle influences from Meliá's Spanish heritage and Thai cuisine are reflected in sweet potato fries with Romesco mayo, aburi shime saba served on crispy Japanese rice with tomato salsa and extra virgin olive oil, and tuna and red snapper rolls accompanied by Thai coconut sauce.

From November, it will introduce one of its signature weekly dining experiences, ‘Yakitori Matsuri’, featuring unlimited Japanese-style grilled skewers, including chicken, pork, Wagyu beef, seafood and vegetables, accompanied by sharing dishes such as fried rice, edamame and sweet potato fries.
