Ingredion Incorporated has expanded its protein fortification portfolio in Europe with the launch of Vitessence Pea 100 HD, a pea protein specifically optimised for cold-pressed bar applications.
The new solution is designed to help manufacturers maintain softness and desirable texture throughout a product’s shelf life while enhancing nutritional value. As consumer demand grows for protein bars used as meal replacements, workout supplements, or on-the-go snacks, texture and sensory appeal have become critical purchase drivers.
Formulating with plant proteins often presents challenges such as increased firmness and gritty or chalky mouthfeel over time. According to Ingredion, Vitessence Pea 100 HD addresses these concerns by preserving a smooth, creamy texture and reducing hardness in cold-pressed bars.
Muserref Karadayi, Business Manager, Healthful Solutions EMEA at Ingredion, said the product was developed to help manufacturers deliver superior texture without compromising nutritional performance. The company identified taste, texture and sensory appeal as key consumer drivers in the sports and nutrition bar segment, guiding the development process.
Ingredion validated the new pea protein in cold-pressed bar applications, where sensory testing showed it provides a short texture with a clean break, while minimising chalky, gritty or powdery perceptions compared to other protein sources. The ingredient also demonstrated low plant or pulse flavour, enhancing overall indulgence.
Beyond cold-pressed bars, Pea 100 HD has shown promising performance in other bakery and bar-type applications, supporting desirable texture across a wider range of baked formats.
According to Ingredion’s proprietary Atlas 2025 research, nutritional information ranks among the top three factors influencing packaged food purchases. Vittessence Pea 100 HD supports clean-label positioning and enables “source of protein” or “high protein” claims, helping brands align with evolving consumer expectations in Europe’s growing plant-based nutrition market.
