Hyderabad’s SodaBottleOpenerWala introduces menu with Irani cafe items

fiogf49gjkf0d SodaBottleOpenerWala, at its Hyderabad outlet, introduced a Hyderabad Irani cafe menu comprising old recipes and flavours.
Besides the Irani chai, which pairs best with bun and butter, the menu comprises Hyderabadi biscuits, such as the sweet and salty Osmania biscuits.
Other items on the menu include Chand, Shatranj and Badam biscuits and Dilpasand puffs.
It also comprises breads such as Sheermal and Munshi Naan. The latter, which is 163 years old, is square, which is why the locals refer to it as char koni naan.
Purani Haveli was the erstwhile residence of the Nizam of Hyderabad. It is also the place where the Munshi Naan originated.
It is credited to the late Mohammed Husain, the munshi (accountant) to the Nizam. The naan is served warm.
Another item on the menu is the mutton mince-filled Varqi Lukhmis (savoury puffs). There is a vegetarian version of it too.
Marag (a spicy mutton soup) is served with Dil Naan (which is heart-shaped). Naan is an accompaniment to paya and zabaan nihari, which are made with trotters and tongue. The dominant flavours are dagad phool (stone flower).
Talahuwa Gosht (fried mutton prepared with onion and spices), Irani haleem (which combines wheat, barley, meat, lentils and spices served with chopped mint leaves, lemon, fried onions, chopped ginger and green chillies) and Hyderabadi mutton/chicken biryani round off the non-vegetarian menu.
The vegetarian fare includes Talihuwi Arbi, Bagara Khana, Khatti Dal, vegetarian biryani served with Baghare Baingan and Dahi ki chutney and Kaddu ka Dalcha, which comprises lentils and gourd.
Dessert comprises Qoobani ka Meetha, which combines apricots and cream.
