Food festival of Anjuman-I-Islam’s hotel management institute turns 10

The 10th edition of Anjuman-I-Islam’s Institute of Hotel Management and Catering Technology’s food festival and inter-collegiate competition took place in Mumbai recently.
It was inaugurated by chef Imtiyaz Qureshi (the chief guest for the event); Zahir Kazi, president, Anjuman-I-Islam; Mushtaq Antulay, vice-president, Anjuman-I-Islam; Yasmin Saifullah, executive chairperson, Anjuman-I-Islam; Aqeel Yusuf Hafiz, joint secretary, Anjuman-I-Islam; Hamida Bhiwandiwala, Kennetis and Joyce and members of the management council.
As a part of academic programme, the final-year students of hospitality management celebrate the annual food fest, MAGN, which offers the youth platform to showcase their vibrant and diverse talents. With food stalls serving delicacies among the activities at the event, MAGN lets them demonstrate their entrepreneurial skills and hone their leadership abilities.
Fire and Ice – Two sides of a coin was the theme for MAGN 2K18. Fire is an imperative component while cooking. From roasting, baking to frying, grilling and searing, the use of fire makes food edible, digestible and safe to consume. Ice, another vital element, is an ingredient in its own right. From storing to cooling food and from safeguarding textures to aerating beverages, this frozen water changes the way we cook.
As hospitality professionals, fire also symbolises strong drive, zest and intensity, and ice symbolises a cool, calm and robust nature. These qualities of Fire & Ice echo through fervour for work and ability to maintain a resolute dedication, while being adaptable.
Guests who have graced the occasion since the launch of MAGN in 2010 include chefs Nilesh Limaye, Satish Arora of the Taj Group of Hotels, Shantanu Gupte of Food Food Channel, Saransh Goila, Ajay Chopra, Vicky Ratnani and Rakhee Vaswani of Living Foodz, among others.
Besides Qureshi (who has served several official banquets hosted by the Prime Minister and the President of India), social worker Pramilata Kokad, who has been working in Palghar District of Maharashtra since 1986 for the development of differently-abled children and Adivasis, graced the food festival.
There were cooking contests in the food festival like Mixologist’s Magic (mocktail competition) and The Incr‘Edible’ Soup‘a’ star (Magn Chef), in which the talented students of various colleges showcased their culinary flair by bringing forth the versatile cuisine of India in a fusion of tradition and contemporary style.
There was a trail of attractive food kiosks, which were crafted and run by the students from scratch all over the place. These food stalls served food that synched well with the theme Vintage to Vogue. The dishes served included Barbeque Chicken Chat and Maara Maari Pani Puri.
Sanjay Walvey, a chef in the bakery department, who has also worked with chef Sanjeev Kapoor, commented, “I see MAGN as the best platform for our students to exhibit their cookery skills. They embrace the fest with such sincerity and warmth, it is almost overwhelming.”
In continuation with a virtuous cause, this year as well, the students of Anjuman-I-Islam have chosen to support the hospitals in their efforts to overcome the current blood shortage by organising blood donation camp.
Through this fest, Anjuman-I-Islam aimed to reach as many donors as possible, encourage them to donate blood and become a saviour of someone’s precious life.
