Courtyard by Marriott, Ahmedabad, organises Andhra fest with authentic touch

Courtyard by Marriott, Ahmedabad, a leading brand of hotel of Marriott International, Inc. has organised “Andhra Food Fest.” The event, which will be on till July 3, 2016, is being executed by chef Satish Chirapa hailing from the Seemandra region of Andhra Pradesh.

As per a press release, the subtle regional variations of Telugu cooking culture are reflected in the mixes and diversity of gravies. The offerings include Mireyalu Bendakaya, a dish that mingles pepper and okra, Guntur Mamsam, Pullihara Rice, Nilagire Mutton, Munakada Mamsam, Kothimera Chicken, Nellore Chapala Pulusu and Karevapaku Chicken. Vegetarian dishes include Artikaya Thallimpu (raw banana dish), Vekaya Bhandakaya Vepudu (potato & okra), Munakada Pullusu (drumstick), Beetroot Rasam and Karivepaku Rice.

Chirapa, chef in southern cuisines, Courtyard by Marriott, Ahmedabad, states “Andhra cuisine is diverse and traverses and touches Telangana, Rayalaseema, coastal locations and it is worth a study how tastes differ from one zone to the other. Food lovers with a thing for hot and spicy with a twist will find their fare right here. It is about chillies, tamarind, asafoetida, red sorrel leaves among others. We tried to keep the ingredients as authentic as possible with a peep into the rice-based sweet dishes too. Munakkada Mamsam and Guttu Venkaya Pulusu are my personal favourites.”

The hotel has added an extra touch to keep the décor in tune and create a mini-Andhra in Ahmedabad. Specialty Andhra condiments, region-influenced attire and table mats along with a seamless buffet décor are enough to transport food connoisseurs to Andhra Pradesh.

Continuing with the quest to bring in the regional flavours, we brought in the Andhra Food Festival this year. We hope to continue raising the bar.”
