Air India unveils refreshed global menu inspired by Indian heritage and world cuisines

Air India has elevated its inflight dining experience with the launch of a refreshed global menu that blends India’s rich culinary heritage with contemporary international flavours. Introduced across most international ex-India routes, and soon to be extended to all domestic and global sectors, the new menu reflects the airline’s ongoing transformation programme and its ambition to deliver world-class hospitality in the skies.

Drawing inspiration from the royal kitchens of Awadh, the vibrant flavours of southern India, and the global appeal of Pan-Asian and European Bistro cuisines, the revamped menu aims to resonate with today’s diverse and well-travelled flyers. The airline has introduced a portfolio of geo-specific “star dishes” designed to enhance the dining experience for passengers from various cultural backgrounds.

First Class guests can now indulge in gourmet meals with artisanal breads, signature desserts, and premium wine pairings, while Business Class features multi-course menus with customisable options. Premium Economy and Economy passengers will experience upgraded trays showcasing wholesome dishes with familiar regional flavours.

Signature Indian offerings include Awadhi Paneer Anjeer Pasanda, Murgh Massalam, and an extensive South Indian platter. International highlights range from a Japanese Teppanyaki Bowl and citrus tiger prawns to Seoul-style flamed prawns and Mediterranean tapas. To appeal to younger travellers, the airline has added Gen-Z favourites such as chicken bibimbap and matcha delice. Comfort dishes like homestyle dal khichdi and stuffed paranthas also feature prominently.

Curated by Chef Sandeep Kalra, the revamped menu also emphasises inclusivity, with over 18 special meal categories, including vegan, gluten-free, and allergen-conscious options. Passengers can pre-select meals via the Air India app.

Aligned with sustainability efforts, Air India is adopting responsible sourcing, seasonal ingredients, compostable packaging, and reduced single-use plastics to minimise its environmental footprint.
