A new AI layer to restaurant experience enhances operations

Change is nothing new in the restaurant industry, but the industry has undergone rapid transformation and significant advancement in technology over the years. In recent years, artificial intelligence (AI) has caught the attention of many as one of the major areas of innovation in restaurant operations around the world.
AI is no longer a future dream for big multi-national chains or high-tech niche markets; it has now developed into a platform for all restaurants, regardless of size, providing operational support across several areas including the supply chain, kitchen operations, the customer experience, and the overall management strategy. The important thing to note is that it is no longer a matter of the extent to which AI has changed restaurant operations; rather, it is how extensively AI has altered our operational models.
A New Direction for AI - Moving on from just Automation Originally, when technology was introduced into restaurants in the early stages, there was a heavy focus placed on automation. e.g., an example of automation would be point-of-sale systems, digital ordering and basic inventory software; AI has created a total revolution where AI is no longer just recording data but is now capable of interpreting that data. In addition to automation, AI also provides intelligence.
AI has the potential to revolutionise restaurants because it can aggregate large amounts of data in real-time and historically and convert that to Actionable Data. The restaurant industry has many changing environmental variables from day to day such as foot traffic, weather, festivals, delivery demand and costs of ingredients, so AI benefits restaurant operators because it provides the ability to process all the above variables simultaneously and enables them to make quicker, more effective decisions than what they could previously do without AI due to the amount of data being processed at one time.
This change has transformed the roles of restaurant operators from reactive problem solving to proactive planning.
Intelligent Forecasting of Demand & Stock Management Artificial Intelligence now plays an important role in demand forecasting, and stock control with many restaurant chains employing AI systems to control and monitor stock usage. Food waste is a major challenge for restaurants so it is critical that food usage is managed efficiently both to help maintain margins but also reduce the environmental impact by producing excessive food waste. Traditional methods of demand forecasting were mainly based on experience and manual projections and many times did not consider new 'peaks' or 'troughs' in demand.
Today, AI methods for demand forecasting utilise multiple points of data history such as past sales, seasonal sales patterns, local events, historical weather data, and web-based behaviours to provide greater accuracy in predicting demand. For restaurants this means more accurate ordering (or procurement) to help reduce excessive over-ordering and reduce the likelihood of stock outs.
This will not only assist in providing better cost control, but will also contribute to improving the responsible use of food – an area where efficiency and ethics increasingly intersect.
Kitchen Operations & Optimising Your Workforce Kitchen efficiency is the nucleus of restaurant operations and AI has begun influencing how kitchens can work behind the scenes. From predicting prep volumes to optimising cooking schedules, utilising AI tools to simulate workflow provides restaurants with efficiencies regardless of time (peak or non-peak).
Equally as important is workforce management. Staffing has consistently been one of the most challenging operational issues facing the hospitality industry. AI scheduling systems analyse sales forecasts, along with past staffing trends, to determine how many staff should be on at any given time preventing over-staffing and reducing staff burnout.
In this regard, AI has proven to be a means of support for human talent assisting chefs, managers, and service teams to achieve excellence, creative expression, and guest satisfaction.
Quality Control and Consistency through AI For many multi-unit restaurant chains, maintaining consistency can be a huge challenge. To support the food preparation process and ensure consistency of portioning and hygiene in a business, AI technology such as computer vision and sensor-based systems are being developed for these uses.
Although these technologies are still developing, they will help support the enforcement of standard operating procedures and minimise human error, which will; therefore provide greater visibility to leadership and improved quality assurance programmes across businesses.
Leadership-Level Decision-Making AI probably has the most significant impact at the strategic level. Most restaurant leaders can now use dashboards to provide near instantaneous access to consolidated sales performance, customer behaviour, cost structures, and operational inefficiencies.
AI does not replace human judgment; rather it enhances human judgment. By revealing patterns and anomalies in data that may not otherwise be evident, AI provides leaders with the ability to take timely corrective actions, which can involve such things as modifying pricing strategies, reworking the menu, or changing expansion plans.
The ability to make data-driven decisions is becoming an important competitive differentiator in an increasingly competitive and margin-sensitive industry.
Challenges There are many positive aspects of adopting AI, but there will still be challenges to overcome. The main challenges are the quality of the data, integration into the existing processes, cost of implementation, and team readiness to adopt. This is especially relevant for mid-sized organisations and those that are independent.
Hospitality is primarily a "people" industry, so the human aspect of using AI will have an effect. AI can enhance the human element of the interaction, but it cannot take away from the interaction. The most successful implementations will utilise technology where it is not obvious, but rather invisibly providing an improved experience for hotels' guests through improved service at the front end.
Transparency surrounding how customer data will be collected and the look of the data is also an important part of responsible adoption. Trust will be one of the keys to the long-term success of AI in hospitality.
The Future AI is still changing how restaurants operate and we have just begun to discover all that this technology can do for us. There will be even more integration of AI across the supply chain, predictive maintenance of equipment through AI, smarter pricing, and more personalised experiences for customers.
The true value of AI will not come from the advancement of the technology itself, but rather how carefully AI is integrated into your restaurant as a strategic partner and not just as a way to improve efficiency; restaurants that consider AI a part of their long-term strategy will have a better chance of managing volatility and sustainable growth. For years, the restaurant industry has relied on intuition, experience, and passion, adding a new layer to the restaurant experience through AI enhances restaurant operations and has the potential to enhance and grow the entire dining ecosystem.
