M V Chandrashekar, Bangalore
Nammura Hotel Pvt. Ltd., part of the Mayura Enterprise has an innovative concept of selling 180 varieties of fresh food in kilograms and litres at wholesale prices. Around 40 per cent of business is generated from the information technology (IT) companies in the city.

The key objective of the concept is to offer daily meals cooked adhering to international standards at an affordable cost, via counter sales, Krishna Hegde, CEO, Right Caterers, told F&B News.

The range of items includes breakfast, lunch, dinner and festive sweets in South/North Indian varieties and a part of Chinese cuisine. The fastest moving items are festival sweets, meals and 'Bisibele bath,' a popular rice, dhal, vegetable preparation unique to Karnataka.

As an environmental conscious company, Nammura insists customers to bring their own containers. For corporate orders and special events, Nammura uses food grade plastics only. Constant preventive maintenance and service are undertaken to ensure smooth operation to avoid unexpected brakedowns. It takes an hour to prepare 1,500 meals. On an average 15,000 to 18,000 meals are sold daily. For outdoor catering between 10,000 and 50,000 people are served.

Its 'Kitchen on Wheels', started in June 2001 is a success for special occasions. The mobile kitchen is equipped in a Canter vehicle with six cooks working and capacity to cook for 300 people.

Plans are underway to set up an industrial catering kitchen at the Electronics City, an industrial belt on the outskirts of Bangalore for a number of multinational companies and industrial houses which have a growing demand for hygienically prepared food. The kitchen spread over an area of 30,000 sq. ft area with a capacity of 25,000 meals (South & North Indian) a day concept will be commissioned in mid-2006. The kitchen is coming up at an investment of Rs 3 crore in a joint venture with a Singapore firm.
