Liberty speciality fats: Have your bakery product and eat it tool

Bakery shortenings are the fats which are used by bakers to make bakery items like biscuits, cakes, puffs, pastries etc. These specific fats are made considering the usage / final product application. These fats are required to be pasty texture and should mix evenly with dough. This should also help in shortening the gluten length & the final product in attaining the desired quality.
Liberty Oil Mills Limited, one of the largest importers and processors of edible oil in the country, is marketing the bakery shortening product under the 'Sheel' brand, Raushan Kumar, Product Manager, Liberty Oil Mills Limited said.
Sheel is made from blend of hydrogenated edible oils. It contains vitamin A & D. The fat spreads evenly and mixes well with the dough to prevent fat bloom. It makes gluten length shorter, helps in making product delicious and keeps products crunchier for longer.
The interesterified fat is a healthier option to hydrogenated fat, says Kumar. It is made by interesterification of refined edible vegetable oil and fats. As the process of manufacturing is different, hence, contains very low or zero trans fat.
This new process for fat modification, known as interesterification, is an alternate to hydrogenated vegetable oil processing, and the resultant product is creamy and solid. Kumar thinks it's only a matter of time before this trans fat free product, for the use of bakeries and chocolate makers, replaces the traditional hydrogenated oil, widely referred to in India as vanaspati.
"Our products are made with interesterification process. Due to this process, bakery shortenings contain less amount of trans fat. So, the product which is made by using our speciality fats is a healthier option because the end product does not contain hydrogenated fat," added Kumar.
Speciality fats are made to suit special applications and products of different users to make the puffs, pastries, cakes, biscuits, cookies etc. Liberty has speciality fats under the brand Biscotti Plus (special interesterified vegetable fat for puffs & pastries) and Biscotti (special interesterified vegetable fat for biscuits & cookies).
Biscotti Plus is made by interesterifying refined edible vegetable oils. It contains vitamin A & D, has better plasticity and easy to use, spreads evenly on the dough, provides excellent layer formation and better patty height to the puff, makes products tastier and crispier and contains very low amount of trans fatty acids.
Biscotti is made from interesterified vegetable fat. It contains vitamin A & D, keeps products fresh for longer, makes products crispier as fat spreads evenly in the dough and prevents fat bloom, makes product crunchier by shortening gluten length and makes products tastier.
Next on the cards is Gold Crème (special interesterified vegetable fat for aerated & special biscuits) and Sof n lite (margarine for cakes).
The bakery shortenings and speciality fats come in bulk packs of 15 kg in both tins and boxes and has been a worthy supplier to big companies including Britannia, Parle, Cadbury and McDonalds.
The bakery division at Liberty is fully equipped with latest equipments with highly qualified technologists. Its work range from process trouble shooting to new product development and rollout. Liberty Oil Mills product line include edible vegetable oil - pure filtered (ground nut oil, pure coconut oil); refined (Sunday sunflower oil, Shelter ground nut oil, Amber soyabean oil, Anchor palmolein); speciality frying oils, etc. In the filtered vegetable oil segment, it has plans to launch Ellenna sesame oil and mustard oil in the next two months.
The company's manufacturing plant at Shahapur, located about 80 kms from Mumbai, is fully computerised that manufacture many popular brands of vanaspati, bakery shortenings and refined oils.
"Today our Shahapur factory is the single largest edible oil complex in India, having an installed refining capacity of 2000 tonnes per day," Kumar says. The technology is supplied from by Gerstenberg Schroder, Denmark & Alfa Laval.
