Boram Um is 2022 Brazilian barista champion

Boram Julio Um, from the company Um Coffee Co. in São Paulo (SP), is the winner of the 2022 Brazilian Barista Championship. He had the best performance in the preparation of espressos, steamed milk drinks and signature originals, beat 19 other competitors, became two-time champion of the competition - the first title was in 2020 - and will represent Brazil in the world championship of the category, which will take place in Australia, from September 27 to 30, during the Melbourne International Coffee Expo (MICE).
The Brazilian Barista Championship 2022 was held between June 24 and 26, during the São Paulo Coffee Festival at the Bienal - Ibirapuera Park in São Paulo (SP). The initiative is part of the actions of the sectorial project "Brazil. The Coffee Nation", developed by the Brazil Specialty Coffee Association (BSCA) in partnership with the Brazilian Trade and Investment Promotion Agency (ApexBrasil).
In a presentation lasting a maximum of 15 minutes, the competitors had to present four espressos, four drinks with steamed milk and four signature drinks to the competition judges. The analysis takes into consideration criteria such as taste, quality and persistence of the crema (espresso), harmony between coffee and milk, creativity (signature drink) and professional handling of the ingredients, the grinder and the espresso machine.
Boram Um's presentation focused on sensory perception in line with the new trend of low caffeine varietals. "Laurina (cultivar) is already well known in Brazil, it has an incredible sensory potential, and, in the competition, I was able to present ways to explore these coffees that are coming with different characteristics, especially in relation to caffeine," he said.
He also praises the fundamental role BSCA plays, in partnership with ApexBrasil, in organizing the barista championships and the importance of the competitions for these professionals. "BSCA gives all the support and structure for us to be able to represent Brazil properly, in the best possible way, in world competitions. It's a fantastic job in terms of support, promotion, structure and organisation of the national championships.
Second place in the 2022 Brazilian Barista Championship went to Hugo Santos Silva, from Sabino Torrefação by Hugo and Thiago, from São Paulo, and the podium was completed by Vitor H. Ferreira Coelho, from Manana Cafés, from Curitiba (PR).
The competition is sanctioned by World Coffee Events (WCE), the international entity that organizes the World Barista Championship (WBC) and holds the rights of the competition worldwide. As the National Body in Brazil, BSCA is responsible, in the country, for conducting the qualifying stages of the world competitions, which lead the national champions to the final phase of the global competitions in their seven modalities: (i) Barista; (ii) Latte Art; (iii) Brewers (coffee preparation); (iv) Coffee in Good Spirits (coffee associated with alcoholic beverages); (v) Cup Tasters (coffee tasters); (vi) Roasters (roasting); and (vii) Cezve Ibrik (Turkish coffee).
