Valrhona unveils world’s first Matcha couverture ‘Matcha Inspiration’

French premium chocolate maker Valrhona has introduced Matcha Inspiration, described as the world’s first matcha couverture chocolate, marking a significant innovation in the global pastry and confectionery space. Developed in collaboration with L’École Valrhona Tokyo, the new couverture will roll out across all Valrhona markets in 2026.

Crafted using first-harvest, first-class matcha sourced from Kagoshima, Japan, the product combines traditional Japanese tea heritage with Valrhona’s advanced chocolate-making expertise. Kagoshima, known for its volcanic soil, mild climate and abundant sunlight, produces matcha celebrated for its vibrant green colour, natural sweetness and rich umami depth.

Matcha Inspiration joins Valrhona’s existing Inspiration range — Raspberry, Passionfruit, Strawberry, Yuzu and Almond — all known for their intense flavours and natural colours. The couverture blends premium matcha with cocoa butter to achieve a smooth texture (15 microns) while preserving the tea’s delicate aroma and colour. The plant-based formulation, made without animal milk, further enhances its versatility for modern pastry applications.

Matcha has remained a strong global trend but presents technical challenges for chefs, including bitterness variation, colour instability and oxidation. Valrhona’s proprietary production process addresses these concerns by stabilising flavour, texture and colour, enabling consistent results across bonbons, pastries, plated desserts and confections.

The flavour profile balances green tea intensity with gentle sweetness, pairing well with coconut, gianduja, rice pudding, strawberry, black sesame, kinako and red bean paste. To support the launch, top chefs across Asia-Pacific markets are receiving a Discovery Box featuring product samples and Tokyo Matcha Bar recipes developed by L’École Valrhona Tokyo.

With Matcha Inspiration, Valrhona continues its century-long commitment to innovation, offering chefs a refined, technically reliable couverture that highlights the authentic taste and character of Japanese matcha.
