The hassle of day-to-day work has very little time to make wholesome food and beverages at home, increasing the need for convenient foods in the present day. Consumption of natural and clean-label health products increases as more individuals seek better lifestyles. Health products that are natural and organic are considered superior options as they are safer for health than processed ones. According to a poll conducted on behalf of Food Supplements in Europe, 56% of respondents pay attention to labelling supplements that say they are organic, natural, or non-GMO.

In 2021, the global revenue for the spices market was more significant. The global natural flavours in 2022 have revenued at US$6400 million and are expected to be US$12070.20 million by 2032, and its demand in the food and beverage industry grew at 4.1% CAGR between 2017 and 2021. The tandem increase in demand for healthy beverages like RTD fruit juices, sports drinks, and therapeutic and functional drinks arises due to the prevalence of health concerns and avoiding artificial ingredients. Thus the awareness of being healthy and hydrated tends to the attention of beverages that prioritise flavoured drinks. Majorly the previous pandemic (Covid-19) brought drastic change among people to spend more money on healthy foods especially flavoured products with spices and seasonings that helps to increase immunity and fight against the disease. Most natural substances in health products are found in herbal medicines and dietary supplements, commonly known as alternative medicine. Market analysts anticipate high and expanding interest in alternative medicine.

Food industries are innovating with natural food flavours due to the surging demand for aliment products that are appealing, palatable, and maintain nutritional value. The main factor boosting market revenue growth is the growing demand for natural flavours made from fresh, whole foods that preserve the flavour and aroma of the original ingredients and are used as healthy spices in various culinary products. The distinct flavours from natural ingredients give variety to many processed items. They come from plant and animal sources, including fruit, vegetables, dairy products, leaves, roots, herbs, spices, meat, fish, bark, and buds. According to research, 71% of consumers avoid artificial flavours, while 63% steer clear of artificial colours. 50% and more consumers prefer products with botanicals and believe in improving health and immunity; taste and dietary insight are also important. Moreover, it is like returning to nature, where all feel the beauty of natural ingredients that helps self-healing. The chaotic lifestyle among people has led them to prefer more on ready-to-eat (RTE) and ready-to-cook (RTC) foods, like instant meals and packaged plant-based meal kits, which are profoundly increasing. The booming food industry is due to the increasing population and higher disposable income that pulls consumers to purchase online and readymade foods with different flavours.

The awareness of the side effects of artificial ingredients drives the demand and increases the need for natural ingredients and flavours. According to future market perception data, there will be an increase in demand for liquid food flavours more than those with powdered flavours, thus increasing the utilisation of functional beverages with flavours.

Spices and Seasonings- Natural Flavouring Agents:
The most popular spices in the world are turmeric, pepper and cinnamon. In contrast, clove, garlic, cardamom, ginger, cinnamon, chilli, vanilla, and cumin seeds are commonly used to season grilled meat, fish, and vegetables. Spices are an essential part of natural flavouring agents. Spice flavours are currently used in an innovative encapsulated form in food. Another intriguing aspect is the rising acceptance of spice and seasoning blends for ready-to-use. Certain herbs and spices are used instead of salt, sugar, and artificial additives. Natural flavours, organic cuisine, and secure dietary supplements drive the need for spices and seasonings. The spice market has been divided into many sorts based on their types, including pepper, ginger, turmeric, cumin, nutmeg & mace, capsicum, cardamom, cinnamon, coriander, and others. In 2020, ginger contributed 37.3% of the world’s spice trade. One of the biggest appeals of spices is their antibacterial qualities. As a result, flavours like paprika, pepper, oregano, mint, and sesame have seen a surge in demand.

Recent Global Market Scenario:
Leading companies in the food flavour business, including Firmenich SA (Switzerland), Givaudan SA (US), International Flavors & Fragrances Inc. (US) and others, are seeking to increase market demand by funding R&D initiatives. Synergy Flavours Inc. manufactures artificial food colours and flavours for various goods. The company creates syrups, powders, extracts, and flavours for various goods, including fruit, vegetables, tea, coffee, and botanicals. Customers of Synergy Flavors are located in Portugal, the UK, and the US. Innova Foods Pty Ltd., the leading supplier of savoury flavour components to Griffith Foods, was set to be purchased by Synergy Flavors Inc. in May 2021. Due to this acquisition, their business has expanded globally, advancing the food flavour sector. In addition, Givaudan SA is an international company that produces and sells flavours for food and perfumes using natural and synthetic chemicals. Manufacturers of drinks, prepared meals, and consumer goods are among the companies to whom the company sells its goods. The specialised ingredients, a culinary flavour and fragrance business, Ungerer & Company, in the United States, was purchased by Givaudan SA in February 2020. Due to Ungerer’s extensive global presence—which now spans more than 60 countries—this acquisition was undertaken for the company’s growth.

Archer-Daniels-Midland Company in China launched a new flavour production facility there to meet the rising demand in various end-use sectors during September 2021. Givaudan instigated a unique flavouring technique in September 2019 with the insight to alter the vegan meat taste and, in February 2022, launched juices with flavours and delicious plant-based products. In order to provide premium matcha to the North American food, beverage, and supplement sectors, Taiyo International teamed up with ITO EN, a provider of genuine, tasty, and incredibly healthy tea. International Flavours and Fragrance Inc. (IFF) announced a merger with DuPont’s Nutrition and Biosciences business unit to expand the variety of natural ingredients. The corporation has invested significantly in a merger to help it fulfil customer demand for natural and healthier food goods.

Also, there is a continual need to diversify the product portfolio in the food and beverage industry and improve the flavour of current items, which is projected to support market growth throughout the planning horizon. Furthermore, it is expected that the ongoing innovation in creating novel flavours and the rising need for natural flavouring components will further boost this demand. As a result, a moderate CAGR was witnessed for the global sale of food flavours during 2018-2022. However, the futuristic insight between (2023-2033) will accelerate to 4.9% of CAGR.
