When you make kheer (Payasam) or cakes or gravies or parathas at home, do you use butter for taste? Probably, when we want our food to be at its best, we add butter. Butter, with its rich, complete flavour, simply makes food taste better.

However, butter fat molecules hold a hidden secret.. The flavours locked up in their complex chemical bonds are a lot more intense than those released upon usual consumption. Butter Buds Food Ingredients has developed a way to unlock the potential of those flavours, freeing them from their fat-laden bonds to work their magic in virtually every type of processed food product.

The company has accomplished this through a proprietary enzyme modification process that was originally pioneered in the 1960's and that continues to be advanced today. At the heart of every Butter Buds product is a carefully tailored enzyme blend. These enzyme blends are added to 100% natural Grade AA butter (or cream and cheese as well) and put through a tightly controlled time/temperature process. The result is concentrated dairy flavour up to 400 times more intense than the original dairy commodity. The concentrate liquid base is then converted to either free flowing spray dried powders or convenient pastes. So the natural taste of butter, cream or cheese can be incorporated in a convenient and economical form.

The benefits of this technology to the food processing industry do not stop at flavour contribution alone. These ingredients offer additional functionalities, such as:

Saving ingredients costs

The dosage rates on these products are usually below 1%, so it is possible to replace higher cost butter or butter powder in a formula with a small percentage of one of these concentrates. The result is achieving all the flavor benefits that butter gives but at a lower cost in use.

Reduce fat content

With today's trend towards healthier eating, everyone wants a product with low fat. As long as it tastes like its full fat alternative. Here in lies the major challenge to product developers engineering lower fat foods. Like actual butter, Butter Buds products contain fat. However, with its low dosage rate, again the amount of fat contributed to the end product is typically less than 0.1%. However, the concentrated nature of the product greatly increases the value in the end product of the small amount of fat in the formulation. So, you can replace butter, cream or cheese with one of Butter Buds® products to create a low-fat product that retains all the flavour and eating qualities of it's full-fat counterpart.

Enhance mouth feel

Much as it does in low fat applications, the rich flavour of Butter Buds® actually serves to deliver a rich mouthfeel perception such as that provided by fats. In a sense, it "fools" the palate into perceiving a richer, fuller, more complex mouth feel than otherwise available in products such as, compound confectionary coatings or cost reduced cream type soups and sauces.

Enhance other flavours

Butter Buds® have a synergitic effect on other flavors in a food system, actually helping to enhance the perception of both savory and sweet flavors. In a savory system, the addition of these dairy concentrates serves to increase the amount of time the savory flavor remains in the mouth. It also harmonizes a savory seasoning blend taking sharper notes, such as garlic, and rounding it off a bit and at the same time allowing softer notes to come up to the surface creating a deeper flavor profile.

Mask off-flavours

Off-flavours can present real challenges in many food systems, ranging from "warmed over" notes in meat products to the undesirable flavor of soy, whey or other ingredients added to end formulations in all application areas. At their low dosage levels, Butter Buds® can very effectively mask these off-notes, even if a dairy note is not desired, for example in a soy based meat replacer. In applications where a dairy note is desired, say a cream based candy, there is a double effect - masking the particular off note and at the same time providing natural dairy body.

We all know that the prices of dairy commodities can fluctuate wildly, creating a real challenge to cost control strategies. In contrast, Butter Buds® are very stable in price.
