Assocom Institute of Bakery Technology and Management, whose campus is located at Knowledge Park III, Greater Noida, has introduced an eight-week entrepreneurship development programme (EDP) in artisan bakery and patisserie, which is not just aimed at encouraging and enabling students to consider bakery technology entrepreneurship as a career choice, but also helping them to create and launch new business ventures.

Raj Kapoor, chief executive officer and managing director, AIBTM, said, “We have started the entrepreneurship programme with the goal of creating an entrepreneurial environment. A bakery can either be established as a retail business from a storefront location selling baked goods to consumers, or as a wholesale business selling baked goods to food retailers and institutions. The main idea was to promote entrepreneurship in the field of baking due to its scope in self-employment.”

AIBTM’s programme has been designed to familiarise the students with all facets of starting bakery business and imparting essential skills on popular product varieties. It is suitable for young persons with the dynamism required to run businesses, persons familiar with the bakery industry, the younger members of families owning bakery businesses who seek modernisation and expansion, and those who would like to upgrade their business skills.

The salient features of this programme are 35 intensive practice sessions in well-equipped workshops under the guidance of master chefs and faculty, and hands-on training in over fifty patisserie and artisan products (including training in the methods and development of recipes, principles of ingredients, testing and quality evaluation, food hygiene, food laws and bakery entrepreneurship).

The durations of other bakery courses offered by AIBTM are two years, one year, six months, three months and even weekly programmes. Depending on their requirements, students can take courses and make strong careers in the baking industry, which guarantees multiple returns. Every course provides in-depth knowledge of baking procedures and relative methods of managing a business.
