Dias appointed as new executive chef at Novotel Hotels & Resorts, Goa

The vibrant dual properties by Accor - Novotel Hotels and Resorts, Goa, have appointed Alex Dias as the new executive chef. He has over 26 years of remarkable culinary experience, and is renowned for curating dishes with a twist and trying new techniques, to keep coming up with new dishes and recipes.

His core responsibilities will include bringing quality and consistency to the table, along with aesthetic presentations, incorporating both modern and traditional trends.

Dias will focus on the development of his team, coaching, mentoring them and constantly improving the team knowledge as to how the food should be prepared and presented. He firmly believes in the food cost/food wastage control programme to avoid food wastage and keeps a monthly profit or loss report.

Prior to joining Accor, he has worked with some of the finest brands like Hilton Hotels in Sharjah as head chef, Abu Dhabi National Hotels Compass ME Das Island in Abu Dhabi as executive chef, Crowne Plaza Abu Dhabi as sous chef and more.

Commenting on his appointment, Ranju Singh, general manager, Novotel Goa Resorts and Spa and Novotel Goa Candolim Hotel, said, “We are elated to have Dias lead our culinary team at the hotel. With him leading the kitchen, we are confident that he will provide the right guidance and leadership to his team. His management style, attention to detail, and result-oriented approach makes him the perfect choice for this role.”

Dias pursued his food production degree in culinary from American Hotel and Motel Association. In his spare time, he likes to work on environment-friendly projects, read and watch football.
