Cocoashala to organise one -day course on bean to bar chocolate making

Cocoashala, a part of Cocoatrait—an initiative to promote knowledge, production and consumption of fine chocolates in India, now offers the course ‘A preview to the magical world of micro-batch (bean to bar) chocolate making.’

The objective is to understand the basics of making own micro-batch chocolate right here in Chennai using small-scale, domestic equipment with a preview course. This would lead the participants to start making chocolates at home, according to L Nitin Chordia, head, Cocoatrait, who has developed the course curriculum. He is also a certified chocolate taster from the International Institute of Fine Chocolate and Cacao Tasting, London, UK.

The preview course will help one start making chocolates at home from cocoa beans for one’s family or friends, help one in the decision to start own business or just simply satisfy thirst for knowledge in the interesting world of micro-batch chocolate making, according to Chordia.

The course includes origin of chocolate, a virtual tour to a cocoa farm, difference between compound and pure chocolate, difference between micro-batch chocolate and industrial chocolate, equipments involved in making chocolate, steps involved in chocolate making, live demonstration, tasting of some Indian micro-batch chocolates, discussion on costs involved, practical tips to get started, challenges and scaling up.

Both professionals and amateurs including students could take up the course. Even patisserie chefs who want to get to know their base raw material in detail along with chocolate enthusiasts and tasters who want to broaden their experience can join the course.

Further, Cocoashala aims to invest in research, development and enhancement of fine chocolate techniques, processes and recipes. It would host the Indian edition of the International Chocolate Awards in India in 2018 and chocolate tasting certification in collaboration with the International Institute of Chocolate Tasting, UK, in December 2017. Poonam Chordia is a chocolatier trained in the art of chocolate making from Belgium and has recently introduced her line of fine chocolates.

The course duration is three hours, with the fee being Rs 4,900 and the venue Cocoashala, 20 Besant Road, Gopalapuram, Chennai. The first batch will be held on April 1 and second on April 8, 2017.
