Santacruz’s Foodhall to host masterclass in chocolate making on June 19

Foodhall Cookery Studio, at Santacruz West’s Foodhall@Linking Road, will host a masterclass in chocolate and praline making between 9am and 2pm on June 19, 2019.

It will be priced at Rs 3,900 plus taxes per person, and conducted by chef Anil Rohira from School of European Pastry.

The menu comprises Salted Peanut Gianduja, Apricot Pate De Fruit, Nougat, Marshmallow, Raspberry Pralines and Strawberry Mint Pralines.

Praline originally meant something that was preserved, usually by coating in caramelised sugar.

The word praline now has different connotations. Classic pralines are blended sugar-coated nuts, while in a chocolate box, it is usually a chocolate filled with a nut and chocolate combination. However, in Belgium, all filled chocolates are known as pralines.

In this masterclass with Rohira, the attendees will explore the whole process of working with almonds and hazelnuts and learning different techniques to create different flavours, before creating their own praline-filled chocolate.
