The Leela Palace New Delhi has appointed Dharmen Makawana as its new executive chef. He will spearhead the hotel’s culinary operations and lead its award-winning kitchen team to orchestrate an inimitable dining experience for the patrons at the capital city’s most awarded restaurants.
Commenting on his appointment, Louis Sailer, general manager, The Leela Palace New Delhi, said, “We are very pleased to welcome Makawana to the vibrant city of Delhi and to our young palace.”
“Highly skillful and recognised for his managerial abilities, he brings forth vast knowledge of the culinary spectra, and we are confident that he will leverage and further enhance our position as the most sought-after dining destination of the city,” he added.
With more than three decades of professional experience in global luxury brands like Nikko, The Four Seasons, The Oberoi and The Leela, across Australia, the Middle-East, South-East Asia and India, Makawana has developed a commendable repertoire to provide memorable culinary experiences.
He is acclaimed for his culinary prowess, mentorship and his hospitality exposure in pre-opening of various hotels across the globe.
Through his own personal quest for knowledge, Makawana has developed skills that focus on high-quality ingredients, varied cooking techniques and local preferences that inspire him to experiment and bring a fresh perspective to his creations with enlivening twists.
He is convinced that food should bring the ultimate joy to diners, and firmly believes that the creative approach to cooking creates a viable excuse to get together at a table.
Makawana’s strength lies in his curiosity, willingness to experiment and an extensive knowledge of international culinary trends. When he is not busy supervising the kitchen team, he loves to spend time with his family and explore local eateries.
