Kunal Kapur’s Food Camp, a curated culinary workshop, is the latest feather in the chef, MasterChef India judge and television presenter’s cap. It is being hosted in association with the International Institute of Hotel Management (IIHM). The first food camp was held at IIHM Pune.
He will train budding chefs on basics of molecular gastronomy like spherification, foams, emulsions, gels, caviar and more. At the same time, he will demonstrate lessons on different techniques of plating food and give desi food an international twist.
Kapur said, “It is always a great feeling to get back to college, and I look forward to the energy and enthusiasm of the students of IIHM. My endeavour with this food camp is to share the food knowledge that I have gathered during my extensive travels over the years with the culinary students.”
He added, “I am super excited about the upcoming road show with IIHM, which is a prestigious body, and truly believe that together we will celebrate the love for cooking and set up new trends and standards.”
Speaking about the association, Dr Subourno Bose, chairman and chief mentor, IIHM and Indismart Group, said, "I think the initiative by Kapur to conduct this food camp in association with IIHM is a path-breaking one, and will pave the way for many such fascinating food events like this in future.”
“We are changing the rules of hospitality education with help of industry champs like Kapur,” he added. The food camp will travel to four other IIHM centres - Kolkata, Delhi, Bangalore and Hyderabad. In the phase two, the road trip may head to cities like Ahmedabad, Jaipur and Guwahati, and the state of Goa.
